Chef De Cuisine Matthew Koffman
Matthew Koffman started in the foodservice industry at the age of thirteen when he took a dishwasher position at a small restaurant in Newburyport. At the age of fifteen, he met his mentor, Chef Stephen Pfingst, Chef/Owner of David’s Restaurant & Tavern, whom eventually influenced Matt to make culinary arts his career. Matt then attended Johnson & Wales University and graduated Magna Cum Laude in 2003. Upon graduation Matt took a position at Spire Restaurant at the Nine Zero Hotel, where he was able to learn from Chefs Toby T. Hill and Gabriel Frasca, all the while, maintaining a second job at Truly Jorg’s Bakeshop, in Saugus, learning baking and pastry techniques. Next, Matt took a position at the new Jury’s Hotel under Chef Matthew King, before reuniting with Chef Toby T. Hill as the Sous Chef at the Eldredge Room at the Queen Anne Inn, in Chatham.
